sear it on high heat to get some colour and flavour. Then turn down to low and close the lid.
Cook on an extremely low temperature till they are just about done, take them off the grill, then crank up the heat, when it is nice and hot, put them back on and grill the outsides. This will get them really nice all the way through and if you do it right, it will prevent them from becoming too dry.
